clean は「きれいにする。」という意味の他に「（物）の中身を空にする。」という意味も持っています。ということで、この場合「お皿の中身を空にする。」すなわち、「全部きれに食べてね。」という意味になります。「お残しは、あきまへんでえ〜。」ということですね。
